
On saturday night we had an impromptu dinner party and I decided to make a fresh salsa that I once made quite often. I can't remember why I stopped making it but it's yummy and easy and even if my guests don't like it, I could eat it with a spoon. Recipe below; Measurements are loosey goosey.
1. chop up a whole bunch of Roma tomatoes into bite sized pieces
2. Add a can o corn
3. finely chop some red onion and add that to the mix (to taste)
4. Season with salt, chili pepper, a little bit of garlic salt and a dash of oregano
5. Add a few spoonfulls of jarred salsa (i like Newman's Medium) just enough for flavoring and consistency
6. Optional: add a can of black beans
7. mix it all up and serve with tortilla chips
8. eat it up real quick before your guests arrive
